Recipe Diaries | Grilled Cheese with Tomato Soup


It’s amazing how many different variants of grilled cheese one can get around the world. There’s the French Croque Monsieur with gruyere, the Welsh Rarebit with boozy Cheddar and Mexico’s Quesadilla. Here in South Africa, its more common to find the humble toasted cheese sandwich dressed up as a braaibroodtjie, filled with tomato, onion and relish and cooked over hot coals until crispy and golden. I’ve had my fair share of braaibroodtjies over the years, so today I’m turning on the flat top grill for a different kind of toastie – the American grilled cheese with smooth tomato soup.
